Plum-marzipan slices with meringue

Ingredients

  • 2 kg Plums / Plum plums
  • 200 g Marzipan raw mass
  • 8 Eggs (Gr. M)
  • 300 g soft butter/margarine
  • 150 g + 3 tablespoons + 150 g sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 500 g Flour
  • 1 package Baking Powder
  • 7-10 Tbsp Grease
  • 1 TEASPOON Lemon juice
  • 50 g flaked almonds
  • 1-2 TABLESPOONS sugar and mint to decorate

Directions

    Clean, wash and stone plums. Dice marzipan. Separate two eggs. Cream fat, 150 g sugar, vanillin sugar and salt. Stir in the marzipan cubes. Stir in 6 eggs and 2 egg yolks bit by bit. Mix flour and baking powder and stir in portions

    Spread the dough on a greased baking tray (approx. 35 x 40 cm). Spread the plums close together (e.g. like roof tiles). Sprinkle with 3 tbsp. sugar. Bake in the preheated oven (electric cooker: 175 °C / fan oven: 150 °C / gas: level 2) for approx. 40 minutes

    Beat 2 egg whites and lemon juice until stiff. While continuing to beat, add 150 g sugar. Continue beating until it is completely dissolved. Pour into a piping bag with star-shaped spout. Spray about 20 meringue tuffs onto the cake. Bake at the same temperature for another 10 minutes.

    Sprinkle the cake with almonds and bake at the same temperature for another 10 minutes. Let it cool down. Decorate plum cake with sugar and mint
