Mix 250 g flour and baking powder. Add 1 packet of vanilla sugar, 25 g sugar, 1 pinch of salt, sour cream and 150 g butter in flakes. First knead with the dough hooks of the hand mixer, then quickly work into a smooth dough with your hands. Cover the dough and chill for about 1 hour. Meanwhile melt 50 butter for the crumbles, let it cool down. Separate the egg.
Put 100 g flour, 40 g sugar, 1 packet vanilla sugar, 1 pinch of salt and egg yolk in a bowl. Add the butter and work into crumbles using the dough hooks of the hand mixer. Wash and stone the plums. Roll out the dough into a rectangle (20 x 40 cm) on a floured work surface. Place on a baking tray lined with baking paper. Roll up the edges from all sides to form a smaller rectangle (approx. 16 x 35 cm). Press the edges in slightly with your thumb, brush with egg white. Sprinkle with almonds and sugar crystals. Prick the base several times with a fork. Pre-bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) on the lower shelf for 12-15 minutes. Remove from the oven, spread plum puree on the base.
