Wash the plums, halve them and remove the stone. Caramelise the sugar in a pot. Deglaze with juice, then add plums, aniseed and cardamom and simmer for about 8 minutes
Stir the starch and about 2 tablespoons of cold water until smooth and bind the compote with it. Let the compote simmer for about 1 minute, then let it cool down while stirring occasionally. Arrange the compote in glasses and sprinkle with vanilla sauce
