Plum cake with marzipan

Ingredients

  • 1 kg Plums
  • 150 g Low-fat curd
  • 8 TABLESPOONS Milk
  • 6 TABLESPOONS Oil
  • 70 g + 60 g sugar
  • 300 g Flour
  • 2 coated Tsp Baking Powder
  • 300 g Marzipan raw mass
  • 1 Protein (size M)
  • 50 g flaked almonds
  • 40 g Apricot Jam
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease

Directions

    Wash, halve and stone the plums. Quarter plums. Mix quark, milk, oil and 70 g sugar. Mix flour with baking powder. Knead into the quark mixture with the dough hooks of the hand mixer.

    Roll out the dough on a floured work surface until round (approx. 34 cm Ø). Place in a greased springform pan (26 cm Ø) and pull up 2-3 cm at the edge. Spread plums on the base. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for about 35 minutes.

    In the meantime, dice the marzipan. Mix with egg white and 60 g sugar with the whisk of the hand mixer. Pour the marzipan mixture into a piping bag with a large star-shaped spout. Take the cake out of the oven and squirt a marzipan wreath close together on the plums and a large dab in the middle of the plums.

    Bake at the same temperature for another 35 minutes. Let it cool down. Roast almond flakes without fat until golden yellow. Warm up the jam and sieve. Spread the cake edge with jam. Press almonds to the edge.
