Ingredients

  • 1 kg Schichtkäse (20 % fat)
  • 380 g Butter
  • 575 g Flour
  • 480 g Sugar
  • 1.25 kg Plums
  • 4 packages Vanillin sugar
  • 6 Eggs (size M)
  • 3 TSP Baking Powder
  • 1 TEASPOON ground cinnamon
  • 400 g Whipped cream
  • 7-10 Tbsp Grease

Directions

    Place the Schichtkäse on a sieve, hang over a bowl and leave to drain overnight. For the crumbles, melt 200 g butter in a saucepan. Put 250 g flour and 150 g sugar in a bowl, add hot butter and knead into crumbles with the dough hooks of the hand mixer. Let it cool down a little bit, add 25 g flour and swivel it under the crumbles. Wash the plums and drain well. Cut the plums lengthwise and stone them.

    Cream 180 g softened butter, 100 g sugar and 2 packets of vanilla sugar. Stir in 3 eggs one after the other, alternating with 30 g flour. Mix 270 g flour and baking powder and finally stir in briefly. Grease a fat pan of the oven (approx. 38 x 32 cm) well and spread the dough on top. Cover with plums. Separate 3 eggs. Mix the layered cheese, egg yolk, 150 g sugar and 2 packets of vanillin sugar with a wooden spoon or the dough hook of the hand mixer. Beat the egg whites until stiff and add 50 g sugar at the end. Stir the beaten egg white into the layered cheese cream. Pour the layered cheese cream onto the plums and spread. Sprinkle with crumbles and bake in the preheated oven, 2nd shelf from below (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 60-70 minutes. Place the finished cake on a grid and let it cool down in the fat pan.

    Mix the layered cheese, egg yolk, 150 g sugar and 2 packets of vanillin sugar with a wooden spoon or the dough hook of the hand mixer. Beat the egg whites until stiff and add 50 g sugar at the end. Stir the beaten egg white into the layered cheese cream. Pour the layered cheese cream onto the plums and spread. Sprinkle with crumbles and bake in the preheated oven, 2nd shelf from below (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 60-70 minutes. Place the finished cake on a grid and let it cool down in the fat pan. Mix 30 g sugar and cinnamon, sprinkle the cake with it and cut into approx. 24 pieces. Serve with whipped cream
