Separate puff pastry sheets and allow to thaw at room temperature. Peel and halve the vegetable onions and cut them into half rings. Clean and wash spring onions and also cut them into rings. Pluck the thyme and oregano leaves from the stems. Heat 3 tablespoons of oil in a frying pan and fry the meat briefly in portions.
Add the rest of the oil to the pan and fry the onions and spring onions briefly. Season with salt, pepper, thyme and oregano. Mix with the meat and let it cool down. Place 2 puff pastry sheets on top of each other and roll out into 3 rectangles (26x32 cm) on a floured work surface. Grease an oven dish (24x30 cm) and sprinkle with breadcrumbs. Place a puff pastry rectangle on the bottom of the dish and spread half of the giro mix on top. Cover with a second pastry sheet and place the rest of the giros on top. Cover with the third pastry sheet and press the edges slightly. Bake in the preheated oven (electric: 200 °C / gas: level 3) for about 30 minutes. Mix egg yolk and cream.
