Peach and yoghurt cream cake

Ingredients

  • 200 g Butter biscuits
  • 150 g Butter or margarine
  • 10 sheets Gelatine
  • 1 kg Whole milk yoghurt
  • 100 g Sugar
  • 7-10 Tbsp grated peel of 1 untreated lime
  • 7-10 Tbsp Juice of 1/2 lime
  • 250 g Whipped cream
  • 1 package Vanillin sugar
  • 1 can(s) (850 ml) Peaches
  • 2 untreated limes
  • 1 TABLESPOON ground pistachio kernels
  • 7-10 Tbsp Freezer bag

Directions

    Fill butter cookies into a freezer bag and crumble them finely with a rolling pin. Melt butter in a pot. Mix crumbs and butter. Pour everything on the bottom of a springform pan (26 cm Ø) and press down firmly. Chill for 30 minutes. In the meantime soak the gelatine.

    Mix yoghurt, sugar and lime peel and juice. Squeeze the gelatine and dissolve. First mix with 2 tablespoons of the yoghurt cream. Stir droplets into the rest of the yoghurt cream. Chill for 20 minutes. In the meantime, whip the cream until stiff and allow the vanillin sugar to trickle in. Drain the peaches. As soon as the cream begins to gel, fold in the whipped cream. Spread 1/4 of the cream on the biscuit base. Spread the peach halves, except for 1 for decoration, evenly over the biscuit base with the opening facing down. Add the rest of the cream and smooth it down.

Remove the cake from the edge with 1 knife. Wash the limes, rub dry and cut into slices. Cut the peach half into slices. Decorate cake with lime slices and peach slices. Sprinkle with pistachios
