Wash the thyme and dab dry. Remove the leaves. Grate parmesan and mix with breadcrumbs and thyme. Whisk egg and milk in a deep plate. Dab meat dry. Season with salt and pepper.
Turn the meat successively first in flour, then in egg and finally in parmesan breading. Heat the oil in a large pan. Fry ##Schnitzel## in portions for 6-8 minutes until crispy brown, turning once.
Remove the cutlets and let them drip off on kitchen paper. Arrange cutlets on a plate.
