Orange chicken with celery

Ingredients

Servings: 2
  • 2 Chicken fillets (approx. 125 g each)
  • 2 Oranges
  • 2 TABLESPOONS Orange marmalade
  • 300 g Potatoes
  • 1/2 (approx. 200 g) Celeriac
  • 2-3 stem(s) Thyme
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TEASPOON Cornstarch

Directions

    Wash the fillets and dab dry. Wash organic orange, dry and cut off 4 slices. Squeeze the rest and the remaining orange. Mix 2 tbsp. juice and jam. Brush the fillets with it.

    Wash the potatoes well and boil them covered in water for about 20 minutes. Peel and wash celery and cut into fine sticks. Wash the thyme and remove the leaves.

    Fry the fillets in hot oil for 3-4 minutes on each side. Season with salt and pepper and remove. Fry the orange slices briefly in the frying fat, remove.

    Fry the celery in the fat for about 5 minutes. Add orange juice and 100 ml water, bring to the boil. Stir starch and 2-3 tbsp. water until smooth. Thicken the sauce with it. Season to taste with thyme, salt and pepper. Simmer fillets and oranges for 5 minutes.

    Serve with the potatoes.
