Ingredients

Servings: 4
  • 2 Carrots
  • 2 stalks of celery
  • 250 g Pork ribs
  • 650 g Onions
  • 1 TABLESPOON black peppercorns
  • 7-10 Tbsp Salt
  • 50 g Garlic sausage
  • 50 g streaky bacon
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp fresh oregano

Directions

    Peel, wash and chop the carrots. Clean, wash and chop the celery. Wash ribs and pat dry. Peel and quarter two onions. Bring the ribs, vegetables, onion quarters, peppercorns and 1 litre of water to the boil and cook for about 15 minutes.

    Peel the remaining onions and cut them into thin rings. Cut garlic sausage and bacon into small cubes. Drain broth, cut meat from the ribs. Fry sausage and bacon cubes crisply in hot oil, add onion rings and fry until translucent.

    Pour in the stock and cook for 30 minutes. Add the ribs and heat in the soup. Season with salt and pepper if necessary. Sprinkle oregano leaves over the soup.
