Ingredients

  • 3 Eggs (size M)
  • 200 g + 5 tablespoons sugar
  • 200 g Butter
  • 100 g Whipped cream
  • 1 package Vanillin sugar
  • 450 g Flour
  • 1 package Baking Powder
  • 1 kg Apples
  • 1 TEASPOON Cinnamon
  • 1/2 Bottle of bitter almond flavor
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Cling film

Directions

    Separate eggs, chill egg whites. Beat 200 g sugar and butter until creamy with the whisk of the hand mixer. Add egg yolk, cream and vanilla sugar and stir in. Mix flour and baking powder and stir in. Form dough into a roll and divide into 2 pieces (1/3 + 2/3). Wrap in foil and freeze for at least 3 hours.

    Peel, quarter, core and roughly grate apples. Mix in cinnamon and 4 tablespoons of sugar. Let the larger piece of frozen dough thaw for about 10 minutes and grate on the same grater. Pour into a greased and flour-blasted springform pan (26 cm Ø). Spread the apples on it. Whisk the egg white with the whisk of the hand mixer until stiff, adding 1 tablespoon of sugar. Stir in almond oil. Spread the egg white on the cake. Grate the remaining dough and finally spread it on the cake. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 70 minutes. If necessary, cover the cake after 45 minutes baking time. Take the finished cake out of the oven, let it rest for 10 minutes and carefully loosen the edge of the springform pan.

    Stir in almond oil. Spread the egg white on the cake. Grate the remaining dough and finally spread it on the cake. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 70 minutes. If necessary, cover the cake after 45 minutes baking time. Take the finished cake out of the oven, let it rest for 10 minutes and carefully loosen the edge of the springform pan. Let the cake cool down, dust with icing sugar. Cream tastes good with it
