Noodles with sausage and spinach

Ingredients

Servings: 4
  • 300 g Parpadelle noodles
  • 7-10 Tbsp Salt
  • 2 small red chillies
  • 200 g Spinach
  • 1 TABLESPOON Sunflower oil
  • 3 boiled coarse bratwursts
  • 3 TABLESPOONS Aiwar (spicy-hot spice paste)
  • 7-10 Tbsp Pepper
  • 100 g Walnut kernels
  • 75 g Parmesan cheese

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Wash the chilli and cut into fine rings. Clean, wash and pat spinach dry. Heat oil in a pan. Press the sausage meat as small dumplings out of the skin and fry in the hot oil all around for 4-5 minutes, add the chilli and spinach, let them fall together.

    Drain the pasta in a sieve, collecting 4-5 tablespoons of pasta water. Mix the pasta water and the aiwar. Put the noodles back into the pot, add the sauteed spinach mixture and sauce and mix well, season with salt and pepper. Lightly roast the walnuts in a pan without fat. Finely slice the cheese. Arrange noodles and sprinkle with nuts and cheese.
