Mushroom sauce

Ingredients

Servings: 8
  • 1 kg Mushrooms
  • 200 ml White wine
  • 200 g Shallots
  • 1 l Poultry stock
  • 1 l Cream
  • 7-10 Tbsp salt, pepper
  • 7-10 Tbsp Rapeseed oil

Directions

    Clean the mushrooms well and cut into quarters.

    Heat the rape oil and fry the mushrooms.

  3. 3

    Cut the shallots into cubes and sauté.

  4. 4

    Add white wine to deglaze.

  5. 5

    Pour in the chicken stock and reduce to 1/3.

  6. 6

    Fill up with the cream and reduce again to 2/3.

  7. 7

    Add salt and pepper to give it the right seasoning.
