Ingredients

  • 4 Eggs (size M)
  • 175 g Sugar
  • 1 pinch Salt
  • 100 g Flour
  • 3 TSP Cocoa powder
  • 1 TEASPOON Baking Powder
  • 5 TABLESPOONS Milk
  • 3 TABLESPOONS Instant espresso powder
  • 2 packages Cream stabiliser
  • 500 g Mascarpone
  • 200 g Whipped cream
  • 50 g Mocha chocolate
  • 7-10 Tbsp Cocoa powder
  • 7-10 Tbsp Chocolate rolls
  • 7-10 Tbsp Sugar
  • baking paper

Directions

    Separate eggs. Beat the egg white until stiff, add 75 g sugar and salt. Stir in egg yolks one after the other. Mix flour, cocoa or baking powder, sieve over the egg mixture. Fold in together with the milk. Line a baking tray (approx. 38 x 30 cm) with baking paper.

    Pour the mixture on top and spread evenly. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 10 minutes. Turn onto a tea towel sprinkled with sugar and carefully remove the baking paper. Roll up from the short side with the tea towel and let it cool down. Mix espresso powder with 3 tablespoons of hot water. Mix 100 g sugar and cream setting agent. Mix sugar mixture with mascarpone and espresso. Whip cream until stiff, fold into the mascarpone cream. Unroll the sponge again. Pour cream on top and spread. Roll up the sponge cake again.

Pour cream on top and spread. Roll up the sponge cake again. Chill for about 1 hour. Chop the chocolate and melt over a warm water bath. Dust the roll with cocoa. Decorate with chocolate rolls. Sprinkle chocolate over the roll, let dry
