Ingredients

Servings: 4
  • 500 g frozen Frutti di mare
  • 500 g Mussels with shell
  • 200 ml White wine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 2 Garlic cloves
  • 2 red peppers
  • 1 (approx. 600 g) Chicken breast ; with skin and bone
  • 500 g Fish fillet (e.g. swordfish or hake)
  • 2 TABLESPOONS Olive oil
  • 250 g Paella Rice
  • 200 ml Orange juice
  • 500 ml Vegetable broth
  • 1 can(s) (425 ml) cherry tomatoes
  • 2 tins (0.1 g each) Saffron threads
  • 7-10 Tbsp Sugar
  • 4 Stem(s) Parsley
  • 7-10 Tbsp Aluminium foil

Directions

    Defrost Frutti di Mare at room temperature. Thoroughly wash and clean the mussels, discard open or damaged mussels. Season wine with salt and pepper, bring to the boil in a saucepan. Add mussels and simmer covered for 6-8 minutes. Drain the mussels, let them drip off and collect the cooking stock. Throw away closed mussels

    Peel and chop the onion and garlic. Clean, wash and cut the peppers into rings. Wash the meat, dab dry and cut from the bone. Cut meat into pieces. Wash fish, dab dry and cut into cubes. Heat oil in a large pan. Season meat with salt and pepper. Brown it from each side, take it out

    Sauté onion and garlic in the frying fat. Add paprika and fry briefly. Add rice and deglaze with mussel stock, orange juice and broth. Mix in Frutti di mare, tomatoes and saffron. Season with salt, pepper and sugar. Spread the meat and fish over the paella. Cover with foil, pressing the edge at the same time. Cook the paella on a low heat for 20-25 minutes. At the end of the cooking time, remove the foil, add the mussels and heat up as well. Wash parsley, dab dry and chop coarsely. Sprinkle Paella with parsley
