Mini vanilla flan with strawberries

Ingredients

Servings: 12
  • 125 g Flour
  • 135 g Sugar
  • 60 g Butter
  • 1 Egg yolk (size M)
  • 1/2 Vanilla pod
  • 350 ml Milk
  • 2 Eggs (size M)
  • 40 g Cornstarch
  • 1 TEASPOON Vanilla Paste
  • 12 Strawberries to decorate
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour

Directions

    Knead the flour, 60 g sugar, butter and egg yolk with the dough hooks of the hand mixer to a short pastry. Roll out on a slightly floured work surface and cut out circles (9 cm Ø). Knead the rest again, roll out and cut out a total of 12 circles. Grease the hollows of a muffin tin (12 hollows) and sprinkle with flour. Line with the dough circles. Place the form in a cool place for about 30 minutes.

    Cut the vanilla pod lengthwise and scrape out the pulp. Boil up milk, 50 g sugar, vanilla pulp and vanilla pod. Mix 2 eggs, 25 g sugar, starch and vanilla paste in a bowl. Remove the vanilla pod from the milk. Slowly add the milk to the eggs while stirring. Pour the cream back into the pot, let it thicken while stirring continuously and remove from the stove

    Pour the vanilla cream into the moulds. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 20 minutes. Reduce the temperature (electric oven: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) and bake for another 10 minutes. Let cool down. Wash and clean the strawberries. Decorate flanges with them
