Minestrone with tortellini

Ingredients

  • 100 g green beans
  • 3-4 (approx. 100 g) stalks of celery
  • 2 medium-sized tomatoes
  • 1-2 TEASPOONS Vegetable broth (instant)
  • 40 g dried tortellini or soup noodles
  • 2-3 stem(s) Basil
  • 7-10 Tbsp white pepper, possibly salt
  • 1 tsp (5 g) sliced or grated Parmesan cheese
  • 1/2 tsp (3 g) Pine nuts

Directions

    Clean, wash and possibly halve the beans. Celery clean, wash and cut into pieces. Wash and roughly dice the tomatoes

    Bring a good 1/2 l water and stock to the boil. Cook the tortellini for about 20 minutes or according to the instructions on the packet. Covered beans and celery and cook for about 15 minutes. Add tomatoes to the stock and cook for the last time

    Wash the basil and remove the leaves. Season the minestrone with pepper and salt if necessary. Sprinkle with parmesan, pine nuts and basil

    - As fat is a flavour carrier, it is important in low-fat cuisine to season well - for example with fresh herbs

    - If you want it to go even faster, you can also reach for a ready-made mixture of frozen vegetables. But please without butter or fat dumpling!

    - If you do not like celery, you can replace it with carrots or kohlrabi
