For the salsa, clean, wash and dice the peppers. Peel and finely dice the onion. Wash parsley, shake dry and chop. Mix everything with the strained tomatoes. Season to taste with salt and chilli.
Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: level 4). Heat oil in a coated pan. Fry 4 fried eggs in this pan until almost done. (Don't worry, the white may still be a little slippery at the top.) Season with salt and pepper.
Line a baking tray with baking paper. Place tortillas on top and spread with the salsa. Place one fried egg on each and sprinkle with cheese. Bake in a hot oven for 5-8 minutes.
In the meantime cut the pepperoni into rings. Sprinkle on tortillas.
