Ingredients

Servings: 20
  • 1.25 kg sour apples (e.g. Boskop)
  • 5 TABLESPOONS + 1 tsp lemon juice (1-11/2 lemons)
  • 1 can(s) (850 ml) Apricots
  • 9 fresh eggs (Gr. M)
  • 250 g soft butter/ margarine
  • 250 g + 350 g sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 450 g Flour
  • 1 package Baking Powder
  • 3 TABLESPOONS Milk
  • 7-10 Tbsp Fat and flour
  • 5 TABLESPOONS chopped almonds

Directions

    Peel, quarter, core and cut apples into slices. Sprinkle with about 5 tbsp. lemon juice. Drain the apricots well

    Separate 8 eggs. Cream fat, 250 g sugar, vanillin sugar, salt and lemon peel. Stir in 8 egg yolks and 1 egg bit by bit. Mix flour and baking powder and stir in with the milk

    Grease the fat pan (approx. 32 x 39 cm) and dust with flour. Spread the dough on top. Cover with apple wedges and apricots. Sprinkle with almonds. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C / gas: level 2) for approx. 45 minutes

    Beat 8 egg whites until stiff, adding 1 tsp. lemon juice. While continuing to beat, add 350 g sugar and continue beating until completely dissolved. Spread the cake with the sugar and bake at the same temperature for another 12 minutes. Let it cool down
