Marzipan fruit cake from the tray

Ingredients

  • 750 g Cherries
  • 1 kg Peaches
  • 250 g Marzipan raw mass
  • 325 g soft butter or margarine
  • 200 g Icing sugar
  • 7-10 Tbsp grated peel of 1 untreated orange
  • 2-3 drops of bitter almond baking aroma
  • 1 pinch Salt
  • 5 Eggs (size M)
  • 500 g Flour
  • 1 package Baking Powder
  • 5 TABLESPOONS Orange juice
  • 50 g crushed almonds
  • 5 TABLESPOONS Milk
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Fat and breadcrumbs

Directions

    Wash the cherries, drain and stone them. Blanch peaches in boiling water for about 3 minutes, rinse with cold water. Peel skin, cut peaches in half and remove stones. Dice 1/3 of the peaches and cut the remaining peaches into wedges. Finely dice the marzipan. Beat the marzipan, fat, icing sugar, orange peel, baking flavouring and salt with the whisk of the hand mixer until foamy.

    Stir in the eggs one after the other. Sift the flour and baking powder, stir into the dough with the orange juice, almonds, milk and diced peaches. Spread the dough into a greased, breadcrumbed fat pan of the oven (32 x 39 cm) and alternately cover with the remaining fruit. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) on the 2nd rack from below for 45-50 minutes. Let cool and cut into pieces. Dust with icing sugar
