  • 120 g Butter or margarine
  • 75 g Sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 2 Eggs
  • 120 g Flour
  • 1 TEASPOON Baking Powder
  • 4 TABLESPOONS Milk
  • 7-10 Tbsp Fat and ground almonds
  • 3 TABLESPOONS Coffee
  • 75 g Amaretti
  • 6 sheets white gelatine
  • 1 can(s) (425 ml; 250 g by weight) Mango
  • 250 g Mascarpone (Italian double cream cheese)
  • 75 ml Lime juice
  • 50 g Sugar
  • 2 TABLESPOONS Coffee
  • 1/2 Bottle of butter-vanilla flavor
  • 1/2 (approx. 350 g) Galia melon
  • 1 (approx. 300 g) Mango
  • 2 Strawberries
  • 7-10 Tbsp Cocoa and icing sugar

Directions

    For the base, beat the fat, sugar and lemon zest until fluffy. Stir in the eggs one by one. Mix flour and baking powder. Alternately stir in the milk. Pour into a greased and almond-spread fruit baking tin (28 cm Ø). Bake in a preheated oven (electric: 200 °C/ gas: level 3) for 17-20 minutes and let cool down.

    Sprinkle with coffee and spread Amaretti on top. For the filling, soak gelatine in cold water. Drain mango well and puree. Stir mascarpone, mango puree, lime juice, sugar, coffee and flavouring until smooth. Squeeze the gelatine, dissolve and stir into the mango cream. Place in a cool place until the mixture begins to set. In the meantime peel melon and cut into very thin slices, cut out seeds. Peel the mango, cut out small balls. Wash and clean the strawberries and cut them into thin slices. Put mango cream on the cake base. Cover cake with melon, mango balls and strawberries. Let it get completely firm.
