Mandarin curd cream slices (diabetics)

Ingredients

  • 4 Eggs (size M)
  • 90 g Diabetic sweetness
  • 7-10 Tbsp pulp of 1/2 vanilla pod
  • 60 g Flour
  • 60 g Cornstarch
  • 1 TEASPOON Baking Powder
  • 1 1/2 (à 370 ml) Glasses Mandarin Oranges
  • 400 g Low-fat curd
  • 1 untreated lemon
  • 350 g Whipped cream
  • 7-10 Tbsp liquid sweetener
  • 25 g crushed pistachio kernels
  • baking paper

Directions

    Separate eggs. Beat egg whites and 2 tablespoons of water until stiff, add 90 g diabetic sweetener and vanilla. Stir in egg yolk. Mix flour, starch and baking powder, fold in. Spread on a baking tray (approx. 38 x 32 cm) covered with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 10-12 minutes. Cooling down

    Drain the tangerines, collect the juice. Drain curd . Grate lemon peel, squeeze juice. Mix quark, lemon peel and juice. Whip cream until stiff, fold in. Sweeten cream with sweetener

    Turn out the sponge cake, pull off the paper. Cut the sponge in half crosswise and drizzle with 4 tablespoons of mandarin juice. Spread half with 1/4 cream. Spread mandarins, except for 10, on top. Spread another two quarters of the cream on top, cover with the second half of the sponge cake. Press lightly, smooth the edges. Spread the rest of the cream on the cake and decorate with a cake comb. Put in a cool place for about 1 hour. Before serving, cut into pieces and decorate with pistachios and remaining mandarins

    YOU CAN EXCHANGE THESE INGREDIENTS:

    Instead of the diabetic sweetness, prepare 120 g sugar and 1 sachet of vanillin sugar instead of vanilla pulp for the sponge cake. For the filling, drain 2 cans (314 ml each) of mandarin oranges instead of diabetic mandarins. Mix the quark cream with 40-50 g sugar and do not sweeten with sweetener
