Ingredients

  • 1 collar Soup Greens
  • 4 (80 g each) Landjäger
  • 100 g streaky smoked bacon
  • 1 Onion
  • 1 TABLESPOON Rapeseed oil
  • 1 TABLESPOON Instant vegetable stock
  • 250 g Dish lenses
  • 2 Bay leaves
  • 3 Juniper berries
  • 3 Cloves
  • 1/2 bunch Chives
  • 6 TABLESPOONS Honey mustard
  • 4 TABLESPOONS white balsamic vinegar + something to taste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Sugar

Directions

    Soup greens clean or peel, wash and cut into small cubes. Cut sausage and bacon into slices. Peel and dice onion

    Heat the oil in a pot. Fry bacon and sausage for about 10 minutes while turning. After about 7 minutes add onion cubes and soup vegetables. Deglaze with 1 1/2 litres of water. Add broth and lentils, bring to the boil and simmer for about 45 minutes. Season with laurel, juniper and cloves

    Wash the chives, shake dry and cut into small rolls. Mix 4 tablespoons mustard, vinegar and chives. Season soup with 2 tablespoons of mustard, salt, pepper, vinegar and sugar. Arrange soup and add seasoning sauce
