Ingredients

  • 4 Eggs (size M)
  • 200 g Flour
  • 100 g Butter
  • 7-10 Tbsp Salt
  • 400 g Sugar
  • 3 Organic lemons
  • 1 TABLESPOON Cornstarch
  • 1 Protein
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour
  • baking paper
  • 7-10 Tbsp Dried peas

Directions

    Separate 1 egg. Put flour, butter in flakes, salt, 50 g sugar and egg yolk in a bowl. Knead with the dough hook of the hand mixer. Then knead with your hands to a smooth dough

    Grease a tart mould (20 cm Ø) with lift-off base. Roll out the dough round (approx. 24 cm Ø) on a work surface dusted with flour. Line the mould with it, press it down, cut off any protruding edges. Prick the dough base several times with a fork. Place a piece of baking paper on the dough. Spread dry peas on top

    Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 20 minutes. Remove the tart from the oven, remove the baking paper with the dried peas and bake again in the oven at the same temperature for approx. 12 minutes. Remove the tart base and let it cool down for about 45 minutes

    Wash the lemons, grate them dry and finely grate the peel. Halve the lemons and squeeze the juice. Separate 1 egg. Mix the egg yolks and 2 eggs. Mix 1 tbsp. water with starch. Boil up lemon juice, lemon peel and 200 g sugar. Remove from the heat and let cool down briefly. Stir in starch and eggs. Bring the lemon mixture to the boil again while stirring constantly. Spread the lemon cream directly on the shortcrust pastry base and chill for approx. 2 hours

    Beat 3 egg whites until stiff and add 150 g sugar. Spread the beaten egg whites loosely with a tablespoon and bake in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for approx. 8 minutes. Remove from the oven, allow to cool, remove from the mould and serve
