Ingredients

  • 100 g Butter or margarine
  • 50 g Sugar
  • 150 g Flour
  • 1 Egg Yolk
  • 2 Eggs (size M)
  • 70 g Sugar
  • 40 g Flour
  • 40 g Cornstarch
  • 14 sheets white gelatine
  • 500 g Edible quark (20% fat)
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 100 ml Lemon juice
  • 2 1/2 (200 g each) Cup of whipped cream
  • 1/2 glass (225 g) Lemon jam
  • 8 Lemon corners
  • 1 TABLESPOON crushed pistachio kernels

    Knead the dough ingredients into a smooth dough. Chill for about 30 minutes. Roll out the dough on a springform pan (26 cm Ø). Prick several times with a fork, close the edge of the springform pan around it and bake in a preheated oven (electric range: 200 °C/ gas: level 3) for about 10 minutes.

    In the meantime, separate the eggs for the sponge cake. Beat the egg whites until stiff, pour in the sugar. Stir in egg yolk. Sift the flour and starch over it and fold in. Spread the sponge cake on the shortcrust pastry and bake again for about 10 minutes.

    Take out and let it cool down. For the quark cream, soak 12 sheets of gelatine in cold water. Mix quark, sugar, vanillin sugar and lemon juice. Squeeze the gelatine, dissolve and stir into the quark.

    Chill the cream. Whip 400 g cream until stiff and fold in as soon as the cream begins to firm up. Bring jam to the boil, pass through a sieve and spread half of the sponge cake base.

    Add lemon cream and leave to set in the refrigerator for 3-4 hours. Soak the remaining gelatine. Heat the remaining jam again and dissolve the squeezed out gelatine in it. Spread on the quark cream and let it get firm.

    Remove the springform pan rim. Whip the rest of the cream until stiff, fill into a piping bag with star-shaped spout and squirt tuffs onto the cake. Decorate with pistachio kernels and lemon wedges. Makes about 16 pieces.
