Lamb skewers with warm yoghurt sauce

Ingredients

  • 200 g cherry tomatoes
  • 24 fresh bay leaves
  • 750-800 g Lamb salmon (detached back fillets)
  • 375 g Cucumber
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 5 Garlic cloves
  • 1 potty fresh mint
  • 2-3 stem(s) Thyme (alternatively 1 teaspoon separate thyme)
  • 1 small sprig of rosemary (alternatively 1/2-1 teaspoon separate rosemary)
  • 5-6 Tbsp Olive oil
  • 2 TEASPOONS Cornstarch
  • 300 g Wholemeal yoghurt
  • 80-100 g Baguette
  • 30 g Butter or margarine
  • 7-10 Tbsp Sweet peppers
  • 12 Kebabs

Directions

    Wash the tomatoes and bay leaves and dab dry. Wash the meat, dab dry and cut into cubes. Put meat, tomatoes and bay leaves on 12 skewers. Wash cucumber, dab dry and cut into thin slices. Spread the cucumber on 4 plates and season with salt and pepper. Peel onion and garlic.

    Chop onion finely, press garlic through a garlic press. Wash mint, thyme and rosemary, dab dry and chop finely, except for some mint for garnishing. Heat 3 tablespoons of oil in a saucepan, sauté the onions and half of the garlic until transparent. Add herbs and fry briefly. Mix cornflour and 5 tablespoons of water and add to the yoghurt in the pot. Bring to the boil very gently, stirring constantly (only briefly so that the starch taste disappears). Season with salt and pepper and keep the sauce warm. Cut the baguette into thin slices. Heat the fat in a large pan and fry the baguette slices in it until golden brown. Add the rest of the garlic at the end and fry as well. Wipe out the pan, heat the remaining oil in it and fry the skewers for 6-8 minutes while turning. Season with salt and pepper.
