King prawn skewer with apple chutney

Ingredients

  • 100 g red pepper
  • 1 medium red onion
  • 1 piece(s) (approx. 8 g) fresh ginger
  • 1/2 red chilli pepper
  • 1 (approx. 250 g) large apples
  • 1 TEASPOON Mustard seeds
  • 1 Mesp. dried thyme
  • 50-60 ml White wine vinegar
  • 80 g demerara sugar
  • 7-10 Tbsp Salt
  • 10 (approx. 250 g) Shrimps without head in shell
  • 2 Limes
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 4 discs (approx. 60 g) Baguette
  • 7-10 Tbsp Thyme
  • 4 Wooden shashlik skewers

Directions

    Clean, wash and finely dice the peppers. Peel and halve the onion and cut into fine slices. Peel and finely dice or grate ginger. Cut the chilli pepper lengthwise, remove the seeds. Cut the pod into fine rings.

    Wash, peel and quarter the apple and cut out the core. Cut the apple quarter into small pieces. Boil up the apple, paprika, onion, ginger, chilli, mustard seeds, dried thyme, vinegar, sugar and a little salt in a pot. Boil down for 25-30 minutes while stirring. Season chutney with salt and let it cool down (about 30 minutes). Wash the prawns and peel them, except for the tail fin. Remove intestines. Squeeze 1 lime, wash the other and cut into pieces. Sprinkle prawns with lime juice and put them on 4 skewers alternating with lime pieces. Heat the oil in a pan and fry the shrimp skewers for 4-5 minutes, turning.

Sprinkle prawns with lime juice and put them on 4 skewers alternating with lime pieces. Heat the oil in a pan and fry the shrimp skewers for 4-5 minutes, turning. Season with salt and pepper and arrange on plates with the apple chutney. Garnish with thyme and serve with baguette
