Kasseler bag with herb curd

Ingredients

Servings: 4
  • 2 small gherkins (approx. 60 g; from the jar)
  • 1 small onion
  • 1 Garlic clove
  • 1/2 pot of chervil or 1/2 bunch of parsley or
  • 7-10 Tbsp Chives
  • 150 g Edible quark (20 % fat in dry matter)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 8 discs (approx. 200 g) Kasseler cold cuts or 4 large slices of cooked ham
  • 4 discs Baguette

Directions

    Cut the cucumbers into thin slices. Peel and finely chop the onion. Peel garlic and press it through the garlic press or chop it finely. Wash chervil or parsley, shake dry and chop finely, except for something to garnish

    Mix curd, onion, garlic and chopped chervil in a bowl. Season to taste with salt and pepper

    Spread the cucumber slices and quark mixture on the middle of the pork slices (cut the ham in half beforehand) and form them into sachets. Arrange the sachets with one slice of baguette each and garnish with the remaining chervil.

    Drink: mineral water or juice spritzer
