Mix flour and baking powder and stir in gradually. Carefully fold in the pistachios and flaked almonds. Beat the egg white until stiff and fold into the dough in portions. Heat 1 tablespoon of clarified butter in a pan (28 cm Ø).
Pour in half the dough. Bake at medium heat until golden brown, quarter and turn with a spatula. Fry from the other side until golden. Pluck into pieces with two forks. Keep the sour cream warm and process the rest of the dough in the same way.
Dust the swill with icing sugar and decorate with flaked almonds. Add the sauce.
