Preheat oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer). Oil a springform pan (approx. 24 cm Ø). Peel, quarter, core and chop apples. Distribute in the mould.
For the dough, whisk the eggs, sugar and vanilla flavouring with the whisks of the mixer until white-creamy. Fold in flour. Spread the dough over the apples.
Bake in a hot oven for 50-60 minutes. Cover the cake after approx. 45 minutes with aluminium foil if necessary. Remove cake from the oven. Leave to cool in the mould. Remove from the mould, let it cool down and dust with icing sugar.
Honey curd tastes good with it.
