Ingredients

  • 1.8 kg Lammkeule
  • 40 g streaky smoked bacon
  • 600 g Carrots
  • 1 kg Potatoes
  • 250 g Onions
  • 1 potty fresh or 2 tablespoons dried thyme
  • 2 TABLESPOONS Oil
  • 3/4 l Vegetable broth (instant)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Thyme
  • 7-10 Tbsp Parsley

Directions

    Wash the meat, dab dry and remove from the bone. Cut meat into pieces. Dice bacon. Peel and wash potatoes and carrots and cut into thick slices. Peel onions and cut into slices.

    Wash fresh thyme and pluck it from the stems. Heat the oil in a frying pan. Fry the bacon in it and take it out. Fry the meat in portions in bacon fat. Remove the meat with stock. Layer meat and vegetables in the roaster and season with salt and pepper. Cover the stew and braise over medium heat for 1 1/2 hours. Season again with salt and pepper. Put Irish stew in a bowl.
