Irish Apple Pie

Ingredients

  • 500 g floury potatoes
  • 125 g + 45 g + some flour
  • 50 g + some + 2 tablespoons butter
  • 7-10 Tbsp Salt
  • 1⁄2 Tsp Cinnamon
  • 2 TABLESPOONS + 50 g brown sugar
  • 800 g sour apples (e.g. Elstar)
  • 4 TABLESPOONS Lemon juice
  • 75 g dried cranberries
  • 2 TABLESPOONS crushed almonds
  • 7-10 Tbsp Aluminium foil

Directions

    For the dough, wash the potatoes and cook in boiling water for about 25 minutes. Drain, rinse with cold water, peel and press through the potato press while still hot. Let it cool down. Knead with 125 g flour, 50 g butter, 1 pinch of salt, 1⁄2 TL cinnamon and 1 tbsp brown sugar to a smooth dough.

    Cover and leave to cool for at least 2 hours. (The dough is still soft, but can be rolled out after cooling.)

    Grease a pie mould (approx. 1.25 l capacity). Peel, quarter and core apples. Cut crosswise into thin slices. Mix with lemon juice, 50 g sugar, 45 g flour and cranberries.

    Cut the dough in half. Roll out one half round (approx. 24 cm Ø) on a floured work surface. Line a mould with it, sprinkle the base with almonds. Spread the apple mix on top. Roll out the rest of the dough also round.

    Use two star cutters (4 and 4.5 cm Ø) to cut out 3-4 stars in the middle. Place the dough plate on the cake. Cut off any protruding edges. Press the dough at the edges with your fingers.

    Melt 2 tablespoons of butter and brush the dough with it. Decorate the pie with the stars and brush them with butter as well. Sprinkle with 1 tablespoon of brown sugar. Bake in the hot oven on the lower shelf for about 45 minutes.

    At the end of the baking time, cover with foil if necessary. Let it cool down on a cake rack.
