Ingredients

  • 4 discs Toast bread (120 g)
  • 3 Eggs (size M)
  • 75 g Butter
  • 100 g + 3 tablespoons sugar
  • 200 g Double cream cream cheese (68 % fat)
  • 125 g chopped almonds
  • 1 TEASPOON Cinnamon
  • 1 kg Apples (e.g. Boskop or Elstar)
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Grease

Directions

    Thinly cut off the bread crust, cut the bread into small pieces and grind finely in the universal chopper. Separate eggs. Whisk butter and 100 g sugar with the whisk of the hand mixer until white and creamy. Stir in egg yolks, cream cheese, 100 g almonds and toast crumbs. Mix 3 tablespoons sugar and cinnamon. Wash and peel apples, remove core with an apple corer. Cut into slices, sprinkle with cinnamon sugar and put into a greased springform pan (26 cm Ø).

    Beat the egg white until stiff and fold into the dough. Spread the dough on the apples and smooth it down. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 30 minutes. 10 minutes before the end of the baking time, sprinkle 25 g almonds over the cake. Take the cake out of the oven and let it rest for about 10 minutes. Carefully loosen and remove the edge of the springform pan. Let the cake cool down and dust with icing sugar
