Hubertus pot with mushrooms and chorizo

Ingredients

  • 500 g Mushrooms
  • 3 Onions
  • 250 g Chorizo Sausage
  • 1 (approx. 250 g) Rift celeriac
  • 1 Stalk leek (leek)
  • 800 g Potatoes
  • 500 g Pork escalope
  • 4 TABLESPOONS Sunflower oil
  • 500 ml Vegetable broth
  • 250 ml Tomato Ketchup
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 bunch of parsley

Directions

    Clean, clean and halve the mushrooms. Peel onions and cut into strips. Cut the chorizo into slices. Peel and dice the celery. Clean, wash and cut leek into strips. Peel, wash and chop the potatoes. Dab meat dry and cut into strips

    Heat the oil in a frying pan. Brown the meat in it in portions for about 5 minutes. Remove the meat, fry the onions and mushrooms in the frying fat for about 4 minutes. Add potatoes, celery and leek. Deglaze with broth, 1/2 litre water and ketchup. Put meat and sausage into the roaster, bring to the boil and cook for about 40 minutes

    Season stew with salt and pepper. Wash the parsley, shake dry, pluck the leaves from the stalks and, except for something to garnish, chop. Arrange stew, sprinkle with parsley and garnish. Serve with herb sour cream
