Slice chillies lengthwise, remove seeds and cut into fine rings, peel ginger and cut into fine strips. Mix both with the honey and lemon juice. Season to taste with salt and sugar. Wash the lower legs, dab dry. Spread with chilli mass and let it stand for at least 1 hour. Place on a greased baking tray and bake in a preheated oven (electric range: 175 °C/ gas: level 2) for 25-30 minutes. Brush with the marinade in between
