Heaven and earth with meatballs (dwarf kitchen)

Ingredients

Servings: 4
  • 75 g streaky smoked bacon
  • 2 Onions
  • 800 g floury potatoes
  • 7-10 Tbsp Salt
  • 800 g sour apples
  • 400 g mixed minced meat
  • 4 TABLESPOONS Breadcrumbs
  • 1 egg (size M)
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Sunflower oil

Directions

    Cut the bacon into strips. Peel onions and cut one into cubes. Fry bacon in a pan without fat for about 6 minutes until crispy. After 4 minutes add onion cubes. Put the bacon to one side.

    In the meantime, peel and wash the potatoes and cook them in boiling salted water for about 20 minutes. Peel apples, remove seeds and dice roughly. Bring 100 ml water to the boil, add apples, bring to the boil and stew in a closed pot for about 4 minutes.

    Cut the remaining onion into fine cubes. Knead minced onion, breadcrumbs and egg. Season with salt and pepper. Form 8 meatballs from the minced meat mixture. Heat oil in a pan and fry the meatballs for 8-12 minutes, turning them well.

    Drain the potato water. Pour off apple water and collect. Mash potatoes and apples with a potato masher. Add apple cooking water to taste. Mix in the bacon stock. Arrange meatballs and puree on plates.
