For the beer marinade, wash parsley, shake dry and, except for something to garnish, pluck leaves from the stalks and chop. Mix mustard, beer and 3 tablespoons of oil. Stir in 1 tablespoon parsley, 1/2 teaspoon coarsely ground pepper and 1/2 teaspoon paprika powder. Wash the pork chops, dab dry, spread with the marinade and cover and chill overnight. Crush pink berries for the herb butter. Knead butter, remaining parsley, pink berries, lemon juice and 1/4 teaspoon salt.

After about 15 minutes, place the hoof steaks on the grill (grill normally) and grill for 10-15 minutes. Wash, clean and slice the tomato. Cut herb butter into slices. Place tomato slices and butter slices on the steaks just before the end. Arrange on plates. Bread tastes good with it
