Green gazpacho for girls' evening

Ingredients

Servings: 6
  • 2 big green tomatoes
  • 1 Green peppers
  • 1 large white onion
  • 1 green chilli pepper (JalapeƱo)
  • 1 Handful of fresh coriander
  • 7-10 Tbsp Juice of 1 lime
  • 250 ml light grape juice (alternatively apple juice)
  • 7-10 Tbsp salt and freshly ground black pepper

    Roughly dice the vegetables and the chillies, chop the coriander. Puree everything together in a blender and add lime and grape juice and season with salt and pepper.
