Green asparagus with sweet chilli-soy sauce with scampi skewers and fried noodles

Ingredients

Servings: 4
  • 1 Garlic clove
  • 4-5 Stem(s) Coriander
  • 150 ml Chilli sauce for chicken
  • 6-7 TABLESPOONS Soy sauce
  • 1 kg green asparagus
  • 7-10 Tbsp Salt
  • 1 TEASPOON Sugar
  • 7-10 Tbsp Juice of 1 untreated lemon
  • 24 (à 20 g; without head, in shell) raw prawns
  • 150 g Eggs Mie Noodles (instant noodles of the Asian cuisine)
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 8 wooden skewers

Directions

    Peel garlic and dice finely. Wash the coriander, dab dry and remove the leaves. Cut the leaves finely. Mix chilli sauce, 4 tbsp. soy sauce, garlic and coriander. Wash asparagus, cut off woody ends.

    Cut asparagus spears in half crosswise. Boil up plenty of water with 1-2 tsp. salt, sugar and 1 tbsp. lemon juice in a large pot. Cook the asparagus for about 6 minutes. Peel prawns, except for the tail fin, and remove the intestines. Wash the prawns and pat them dry. Put 3 prawns on each wooden skewer. Scald the noodles with boiling water, let them simmer for about 4 minutes, take them out and quench them. Heat 3 tablespoons of oil in a large pan. Fry the prawn skewers in it in portions while turning for about 4 minutes. Season with salt, pepper and remaining lemon juice, keep warm.

    Put 3 prawns on each wooden skewer. Scald the noodles with boiling water, let them simmer for about 4 minutes, take them out and quench them. Heat 3 tablespoons of oil in a large pan. Fry the prawn skewers in it in portions while turning for about 4 minutes. Season with salt, pepper and remaining lemon juice, keep warm. Remove the asparagus and keep warm as well. Heat 1 tbsp. oil in a frying pan. Add the noodles and fry for approx. 3 minutes, season with 2-3 tbsp. soy sauce and remove. Arrange noodles, shrimp skewers and asparagus on plates. Add chilli-soy sauce

    Heat 1 tbsp. oil in a frying pan. Add the noodles and fry for approx. 3 minutes, season with 2-3 tbsp. soy sauce and remove. Arrange noodles, shrimp skewers and asparagus on plates. Add chilli-soy sauce
