Gooseberry mandarin cake from the tin

Ingredients

  • 1 kg red gooseberries
  • 500 g green gooseberries
  • 300 g Butter or margarine
  • 400 g Sugar
  • 1 pinch Salt
  • 7 Eggs (size M)
  • 100 ml Milk
  • 750 g Flour
  • 1 package Baking Powder
  • 2 TEASPOONS Cinnamon
  • 250 g Sour cream (sour cream with 24% fat)
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Grease

Directions

    Clean and wash gooseberries. Cream soft fat, 300 g sugar and salt. Add 5 eggs and milk one after the other. Mix flour, baking powder and cinnamon and stir in by the spoonful. Spread the dough on a greased fat pan of the oven. Pre-bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for approx. 10 minutes. Whisk sour cream, remaining sugar and remaining eggs.

    Spread the berries on the dough and pour over the sour cream. Bake the cake for another 45 minutes. During the last 10 minutes, cover with baking paper if necessary. Dust with icing sugar and let it cool down on a cake rack. Add some more icing sugar before serving. Results in about 30 pieces
