Fruit cake on the tray

Ingredients

  • 250 g Butter or margarine
  • 175 g Sugar
  • 1 package Vanillin sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 6 Eggs (size M)
  • 300 g Flour
  • 850 g Whipped cream
  • 1 package Baking Powder
  • 375 g small strawberries
  • 250 g blue and green grapes
  • 450 g Bananas (2-3 pieces)
  • 2-3 TABLESPOONS Lemon juice
  • 1 package (approx. 185 g, for 950 ml liquid) Cake cream Lemon cream
  • 2 packages glaze
  • 500 ml white grape juice
  • 7-10 Tbsp Lemon balm
  • 7-10 Tbsp Grease

Directions

    Cream fat, sugar, vanillin sugar and lemon peel. Gradually stir in eggs and approx. 3 tablespoons of flour. Add 100 g whipped cream. Mix remaining flour and baking powder and finally stir in briefly.

    Spread the dough evenly on a greased grease pan of the oven (approx. 37x32 cm) and bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 15-20 minutes. Let the cake cool down.

    In the meantime, wash the strawberries and grapes, dab dry and clean them. Leave strawberries whole, halve or quarter them, depending on their size. Halve the grapes and remove the seeds. Peel and slice bananas and turn them in lemon juice.

    For the cream, whip the remaining cream until stiff. Put the cake cream into a mixing bowl, add 200 ml cold water and mix well with a whisk for about 1/2 minute. Stir in approx. 4 tablespoons of the whipped cream, then fold in the remaining cream.

    Spread the lemon cream on the sponge base and smooth it down. Drain the bananas and spread on the cream with the remaining fruit. Press the fruits lightly into the cream. Put the tray in a cool place for about 3 hours.

    Mix the cake glaze powder with a little grape juice in a pot until smooth. Add the rest of the juice and bring to the boil while stirring. Let the finished glaze stand for 1-2 minutes, then spread it evenly over the fruit.

    Place the tray in a cool place for another 20-30 minutes. Cut the cake into approx. 20 pieces (preferably with an electric knife) and serve decorated with lemon balm. Results in about 20 pieces.
