Ingredients

  • 500 g Plums / Plum plums
  • 100 g + 50 g soft butter
  • 150 g clotted cream
  • 50 g + 40 g sugar
  • 2 packages Vanillin sugar
  • 7-10 Tbsp Salt
  • 250 g + a little + 100 g flour
  • 2 slightly heaped Tsp baking powder
  • 1 Egg (Gr. M)
  • 2 TABLESPOONS chopped almonds
  • 200 g Plum jam
  • 7-10 Tbsp Sugar crystals
  • baking paper

Directions

    Wash plums, remove stalks, halve and stone them. Line baking tray with baking paper. Melt 100 g butter at low heat, cool down a little. Mix sour cream, 50 g sugar, 1 vanillin sugar and 1 pinch of salt. Stir in the liquid butter bit by bit. Mix 250 g flour and baking powder, knead in with a hand mixer. Then knead briefly with floured hands

    Roll out the dough on some flour to a rectangle (approx. 20 x 40 cm). Lay diagonally on the baking tray. Fold the edges approx. 2.5 cm inwards and press them slightly flat. Separate the egg. Whisk the egg white, brush the edges with it and sprinkle with almonds. Prick the pastry base several times with a fork. Pre-bake in the preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for approx. 15 minutes

    Melt 50 g butter over low heat. Put 100 g flour, 40 g sugar, 1 vanillin sugar, 1 pinch of salt and egg yolk in a bowl. Add the liquid butter and knead into crumbles with a hand mixer

    Spread the bottom with plum jam. Spread plums on top. Sprinkle with crumbles and grind between your fingers. Bake at the same temperature for 15-20 minutes. Cool down. Sprinkle with sugar crystals
