Fried potatoes with fried eggs

Ingredients

Servings: 4
  • 1.2 kg Potatoes
  • 2 Onions
  • 5 TABLESPOONS clarified butter
  • 200 g smoked streaky bacon; in cubes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 8 Eggs (size M)
  • 1/2 bunch Parsley

Directions

    Wash the potatoes thoroughly and cook in plenty of boiling water for about 20 minutes. Drain the potatoes, rinse under cold water and peel. Let the potatoes cool down

    Cut the potatoes into slices. Peel and finely chop the onions. Heat 4 tablespoons of clarified butter in a large or 2 smaller pans. Fry the potatoes for about 10 minutes, turning them several times until golden brown. Add the onions and bacon only shortly before the end of the frying time and fry with them. Season potatoes with salt and pepper

    Heat 1 tablespoon of clarified butter in a frying pan. Beat the eggs and let them fry for 2-3 minutes as fried eggs. Season with salt and pepper. Wash parsley and shake dry. Pluck off leaves and chop finely. Arrange fried potatoes with fried eggs, sprinkle with parsley. Beetroot tastes good with it
