Fresh pumpkin soup with chicken filet

Ingredients

Servings: 4
  • 3 Chicken filets (approx. 450 g)
  • 2 TABLESPOONS Oil
  • 1 medium-sized apple
  • 1 big onion
  • 1 kg Pumpkin
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1/2 -1 TEASPOON Curry
  • 2-3 TEASPOONS Chicken broth
  • 1/2 bunch Chives
  • 2 TABLESPOONS Mashed Potato Flakes
  • 4 TSP Fresh cream

Directions

    Wash the fillets, dab dry. Fry in hot oil in a pot for about 4 minutes on each side. Peel and core the apple. Peel onion. Cut both into small cubes

    Seed the pumpkin with a spoon. Peel and roughly dice. Season fillets and take out. Sauté onion in frying fat. Steam pumpkin and apple for about 2 minutes

    Sprinkle with curry, sweat on. Deglaze with 1 l water, bring to the boil. Stir in stock, simmer for about 10 minutes. Wash chives, cut into rolls, slice meat

    Lift out 3 tablespoons of pumpkin. Puree the soup. Stir in flakes, bring to the boil. Heat meat and pumpkin pieces in it. Serve with crème fraîche and chives
