Ingredients

  • 250 g soft butter or margarine
  • 325 g Sugar
  • 1 pinch Salt
  • 7-10 Tbsp pulp of 1 vanilla pod
  • 6 Eggs (size M)
  • 350 g Flour
  • 75 g Cornstarch
  • 1 package Baking Powder
  • 100 g Whipped cream
  • 500 g Strawberries
  • 250 g Low-fat curd
  • 250 g Double cream cream cheese
  • 7-10 Tbsp Peel and juice of 1 untreated lemon
  • 125 g Strawberry Jam
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Fat and flour

Directions

    Cream fat, 250 g sugar, salt and vanilla pulp for about 8 minutes. Stir in eggs one by one. Mix flour, starch and baking powder and stir into the fat egg mass alternately with the cream. Grease a ring form (2.8 litres capacity) and dust with flour. Pour in the dough and bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 40 minutes. Take out the cake and let it rest in the form for about 10 minutes.

    Turn out onto a cake rack and let it cool down. In the meantime wash and clean the strawberries. Cut 350 g strawberries into fine cubes. Cut 150 g strawberries into slices. Mix curd, cream cheese, lemon peel, lemon juice and 75 g sugar with the whisks of the hand mixer until smooth. Put some quark cream for decoration in a piping bag with a perforated spout. Stir the strawberry cubes into the rest of the cream. Cut the wreath twice horizontally. Stir the jam until smooth, spread on the bottom base. Pour the second base on top, spread the strawberry cream on top. Place the top cake layer on top. Dust the wreath with icing sugar.
