Fish curry with cucumber salad

Ingredients

Servings: 4
  • 2 Cucumbers
  • 2 red onions
  • 3 TABLESPOONS Cider vinegar
  • 3 TABLESPOONS Peanut oil
  • 2 TABLESPOONS Sugar
  • 1 TABLESPOON Chilli Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 Onions
  • 300 g cherry tomatoes
  • 2 big red chilli peppers
  • 6 TABLESPOONS Oil
  • 1 TABLESPOON yellow curry paste
  • 1 can (400 ml) Coconut milk
  • 800 g Cod fillet
  • 2 TABLESPOONS Flour
  • 1 TABLESPOON Curry Powder
  • 2-3 stems Parsley
  • 2 Organic limes
  • 2 arabic thin flat breads (à approx. 75 g)

Directions

    Wash and clean the cucumbers, peel them in strips and slice them finely. Peel and halve red onions and cut them into fine strips. Mix vinegar, oil, sugar and chili oil together, season with salt and pepper. Mix the cucumber and onion strips in a bowl, pour the vinegar stock over them and knead well with your hands. Leave to stand for about 30 minutes.

    Onions peel, halve and in fine strips cut. Wash and halve the tomatoes. Wash chillies and cut into fine rings. Heat 2 tbsp. oil in a pot, fry onions and half of the chillies for about 2 minutes, stir in curry paste and add coconut milk and let it simmer for 2-3 minutes.

    Wash the fish, dab dry and cut into pieces of about 3 cm. Mix flour and curry powder, turn fish pieces in it. Heat 4 tablespoons of oil in a large frying pan and fry the fish in it for about 2 minutes while turning it, remove it and let it drip off on kitchen paper. Add the tomatoes and fish pieces to the sauce, heat up again and season with salt and pepper.

    Wash the parsley, shake dry and pluck the leaves from the stalks. Wash limes hot, grate dry and cut in half. Quarter flat breads. Pour cucumber salad into glasses. Arrange fish curry on plates, sprinkle with the remaining chilli rings and parsley. Arrange 1 lime half and 2 flat bread quarters on each plate.
