Ingredients

  • 100 g Ricotta cheese (firm)
  • 100 g Parma ham
  • 75 g green, pitted herbal olives
  • 12 thin, triangular dough sheets (available in Turkish specialist shops)
  • 4 TABLESPOONS oil for frying
  • 1 collar Basil
  • 1 collar Parsley
  • 2 Garlic cloves
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 ml Olive oil
  • 7-10 Tbsp Lemon slices and basil leaves

    Grate the ricotta roughly. Cut ham into thin strips. Chop olives. Mix ricotta, ham and olives. Spread a thin layer of dough sheets with cold water. Put some filling in the middle and roll up from the top. Press together at the ends.

    Fry the dough rolls in hot oil for about 2 minutes until golden brown. For the sauce, wash the herbs and dab dry. Peel garlic. Chop herbs and garlic finely and mix with some lemon peel and olive oil. Season with salt and pepper. Sprinkle dough rolls with lemon peel and arrange on a plate garnished with lemon slices and basil leaves. Add the sauce
