Exotic fruit ragout in spice syrup

Ingredients

Servings: 4
  • 1 Vanilla pod
  • 10 g fresh ginger
  • 1 Organic Orange
  • 50 g Sugar
  • 1 Cinnamon stick
  • 2 Star Anise
  • 6 Cloves
  • 25 g Honey
  • 1 Mango
  • 2 Kiwis
  • 1 Carambola
  • 1/4 (approx. 250 g) Pineapple
  • 15 g dried cranberries

Directions

    Slit the vanilla pod lengthwise and scrape out the pulp with the back of a knife. Peel ginger and cut into fine pieces. Wash the orange hot, grate dry and peel the peel thinly. Put sugar, 200 ml water, vanilla pulp, ginger, orange peel, cinnamon, star anise and cloves in a pot. Bring to the boil and simmer for about 5 minutes until syrupy. Remove from the heat and stir in the honey. Let it cool down lukewarm and pour through a sieve

    Cut the mango off the stone. Peel the flesh and cut into thin slices. Peel the orange so that the white skin is completely removed. Cut the orange into thin slices. Peel and halve kiwis and cut into thin slices. Wash the carambola and cut into thin slices. Peel and quarter pineapple, remove stalk. Cut quarter into thin slices. Mix fruits and cranberries in a bowl. Pour syrup over it and let it stand in the fridge for about 1 hour
