Eggnog and cherry tart

Ingredients

  • 80 g soft butter or margarine
  • 160 g Sugar
  • 1 package Bourbon vanilla sugar
  • 7-10 Tbsp a few drops of "bitter almond" baking oil
  • 2 Eggs (size M)
  • 70 g Flour
  • 65 g Cornstarch
  • 70 g brown ground almonds
  • 1 go. Tsp baking powder
  • 1 glass (720 ml/ 680 g E/ 370 g cut-off weight) pitted sour cherries
  • 7-10 Tbsp thinly peeled rind of 1 untreated lemon
  • 25 g flaked almonds
  • 1 package (200 g) Double cream cream cheese
  • 375 g Whipped cream
  • 2 packages Cream stabiliser
  • 3-4 Tbsp Egg liqueur
  • 7-10 Tbsp Grease

Directions

    Cream fat, 80 g sugar, 1/2 packet vanilla sugar and baking oil. Stir in eggs one after the other. Mix flour, 30 g starch, ground almonds and baking powder and stir in briefly.

    Put the dough into a greased springform pan (26 cm Ø) and smooth it down. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for 15 minutes. Let the base in the tin cool down on a cake rack.

    Drain the cherries on a sieve and collect the juice. Stir the rest of the starch with a little cherry juice until smooth. Bring the rest of the cherry juice, 2 tablespoons of sugar and lemon peel to the boil. Stir in cornflour, bring to the boil again briefly and remove lemon peel.

    Fold in the cherries and spread the compote on the almond base. Let it cool down. Roast the flaked almonds in a pan without fat until golden brown. Let it cool down on a plate. Stir cream cheese, remaining sugar and vanilla sugar until smooth.

    Whip the cream and cream firmer until stiff and mix with the cream cheese. Remove the cake from the tin and brush loosely with the cream. Sprinkle almond flakes on the edge and put the cake in a cool place until serving.

    Pour egg liqueur over the cake just before serving. Makes about 16 pieces.
