Ingredients

  • 2 Eggs (size M)
  • 1 pinch Salt
  • 110 g Sugar
  • 1 package Vanillin sugar
  • 30 g Flour
  • 30 g Cornstarch
  • 1/2 TEASPOON Baking Powder
  • 100 g Walnut kernels
  • 400 g Whipped cream
  • 1 package (6 g) fine orange fruit
  • 2 Oranges
  • 100 g fresh dates
  • 1 TABLESPOON crushed pistachio kernels
  • baking paper

Directions

    Separate eggs. Beat the egg whites, 2 tablespoons of cold water and salt until very stiff. Stir in 100 g sugar and vanillin sugar. Carefully stir in the egg yolks. Sift flour, starch and baking powder onto the egg foam mixture.

    Carefully fold in. Chop the walnuts, fold one half into the sponge mixture. Line the bottom of a springform pan (26 cm Ø) with baking paper. Fill in the dough and smooth it down. Bake in a preheated oven (electric: 200 °C/ gas: level 3) for about 25 minutes.

    Remove from the mould and let it cool down on a cake rack. Whip the cream until stiff, while stirring in the remaining sugar and fine orange fruit. Peel oranges so that the white skin is completely removed.

    Cut oranges into slices, halve them. Wash the dates, dab dry and cut into small pieces. Cut the sponge cake base once with a saw knife. Spread a third of the cream on the bottom cake base.

    Place second shelf on top. Spread the remaining cream all around the cake. Sprinkle the edge of the cake with remaining walnuts (keep one tablespoon). Decorate the cake surface with oranges, dates, walnuts and pistachios.
